This classic Cajun seasoning has become a main stay in American kitchens. The flavour combination is perfect for seasoning almost anything. It can be used sparingly to accent soups and sauces or can be used as the dishes main flavour. To blacken meats, simply rub the meat with a tiny bit of oil and then dredge the meat in the seasoning. Pan-Sear the seasoned meat in a pre-heated pan. Equally good with fish or meat, sprinkle generously over the flesh then pan-fry, grill, barbeque or bake. Particularly good is frying in butter when the spices 'blacken' and intensify in flavour and the butter takes on a darker colour and contributes a nutty flavour.

Caraway Seed is the dried fruit of the herb Carum carvi. The small, brown seeds have a flavour similar to a blend of Dill and Anise--sweet but faintly sharp. Caraway Seed is known for its flavour in rye bread, and it is used to flavour cakes, biscuits, cheese, carrot, and potato dishes. Caraway is used in European, German, and British cooking and pickle blends, harissa, and sauerkraut blends. Caraway seeds are believed to have been used in Europe longer than any other condiment. The first recorded use of this spice was in Egypt, in the medical papyrus of Thebes in 1552 B.C

Cayenne a hot, pungent powder made from various tropical chillies. The cayenne chilli is a bright red chilli that ranges from 2-5 inches long and about 1/2 inch in diameter. Cayenne chillies are generally sold dried and used in soups and sauces. The majority of cayenne chillies are used to make cayenne pepper. Used both in cooking and medicine, it owes its hot flavour to a chemical called capsaicin, which comprises about 12% of the chilli. The word cayenne seems to come from kian, the name of a pepper among the Tupi Indians in what is now French Guiana and was named after either the Cayenne River or the capital of the country, Cayenne.
